SCRUMPTIOUS SATURDAY

"c is for cookie...that's good enough for me..."
we're going to a cook out and need to take a side dish. what to take? what to take? i could make a pasta salad...that's delicious and who doesn't like pasta? but...there will be kids...lots and lots and LOTS of kids. i want to take something even the pickiest of kids will like, too. cupcakes? yummy...but a lot of work. brownies? yummy...but i have none of the ingredients. and then it hits me! who doesn't like chocolate chip cookies?!!!! right? riigghhtt?! i know i'm right...

GRANDMA MARGE'S CHOCOLATE CHIP COOKIES

ingredients:

1 cup butter (softened, not melted)
1 cup sugar
1 cup brown sugar (packed)
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
3 cups all~purpose flour
2 cups semi~sweet chocolate chips
1 cup chopped walnuts (optional)

preheat oven to 350°. cream together butter, white sugar, and brown sugar. beat in the eggs, one at a time. add vanilla. dissolve baking soda in hot water and add to batter with salt. stir in flour, chocolate chips, and nuts. drop by spoonfuls onto ungreased cookie sheet (i always use parchment paper for easy clean up). bake for about 10 minutes, or until edges are a pretty brown. makes about 4 dozen cookies, depending on how big your spoonfuls are.

oh! AND, by the way, tomorrow (august 4th) is national chocolate chip day! celebrate by making these delicious cookies! or with a big old bowl of mint chocolate chip ice cream!!

PINTEREST RECIPE SUCCESS

FLASHBACK 1989
something up for me..."
my grandmother sent me a cookbook from her church in berea, kentucky. i'm still learning to cook so i really need this. i immediately focus on all things chocolate. and then i see it....bake me!! bake!!! meeee!!!...a hershey chocolate syrup cake. oh...i'm doing this. i rush out and get all the ingredients. i put the boys down for their nap. i start baking this amazing cake. it comes out of the oven looking so warm and delicious. i let it cool a bit and then put it on a pretty cake plate someone had given me when i got married. and to think i once thought...why the flip would someone give ME a cake plate?!...next comes the chocolate glaze. i had carefully made this glaze...making sure not to scorch it...this was going to be delicious. i start to drizzle the glaze over the cake. crack...wait? what is that sound?...crash!!! are you flippin kidding me right now?!!! the heat of my glaze just shattered my beautiful cake plate!!! chocolate syrup cake is all over the counter...all over the floor...and full of shards of glass...
FLASH FORWARD october 1, 2012
if i've said it before, i've said it 45000 times...i flippin love pinterest. and i've been trying new recipes from the website and posting the results here on bird food. well today i tried 2 recipes...an entree and a dessert...at the same time...making a total disaster out of my kitchen. the recipes? TOTAL SUCCESS!!!  definitely must tries!!
first up:

EASY PUMPKIN COOKIES

ingredients:
1 box of spiced cake mix, dry
1 large can of pureed pumpkin (NOT pumpkin pie filling)
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup chopped walnuts


preheat oven to 350...whisk all dry ingredients together, making sure to break up lumps in cake mix. mix in canned pumpkin...blend well to get rid of lumps. spoon a tbs sized lump of dough onto cookie sheet (greased or lined with parchment paper)...cookies will NOT spread during baking so feel free to crowd them. bake for 15-18 minutes. let cool on wire rack. store in an air tight container in fridge to prevent them from getting soggy. makes about 60.

(these were absolutely soft and delicious...and the easiest cookies i have ever made...)

on to the entree:

LASAGNA ROLL UPS

ingredients:
1 lb box of lasagna noodles
1 lb italian sausage
15 oz ricotta cheese
1 cup shredded mozzarella
1/4 cup parmesan
1 lg egg
salt and pepper to taste
2 1/2 cups marinara sauce
cooking spray

boil lasagna noodles in large pot until al dente (soft but not soggy). while noodles are cooking prepare filling (brown sausage and mix with ricotta, mozzarella, parmesan, egg, and salt & pepper to taste). drain noodles in colander. on clean surface, lay out noodles. spread a thin layer of filling on each noodle, roll up, and placed in greased glass baking dish. when all the mixture is gone, pour marinara over all rolls. cover with foil and bake, 30 minutes at 400 degrees. 

*hint: the recipe called for spinach but said you can use any meat...since the bk is a carnivore we went with the sausage
makes about 18 roll ups...2 per serving. consider freezing half the roll ups for a meal on another day...
also...the recipe did not call for topping with mozzarella before baking, but i feel like it would have been a great touch...

FLASHBACK july 2011


*NOTE: after seeing many "untruths" posted on facebook the past few days, i felt a need to re~post this with an important side note...

like i do almost every morning, i get my cup of coffee, get comfy, and scroll thru facebook. the news is on and i hear a story that makes me sad. amy winehouse has died. i've been waiting 5 long years on a follow~up to "back to black" that will never come. boo. i realize she was an alcoholic and drug addict. her death was imminent. i'm still sad. i post a status update "rip amy winehouse (14 sept 1983~23 jul 2011). not that i'm surprised, but i am still sad. yet another member of the 27 club...:'( ". other people post nearly the same thing. within a few hours another post catches my attention. it says, roughly, "while you are mourning the loss of a drug addict, what about the 11 soldiers killed in a helicopter in afghanistan. you should be mourning them..". what? i've been watching the news all day and haven't heard a thing about this. i look it up on google. i can't find anything. finally, i see it. it happened in 2007. wait? so, you (invisible facebook user) are assuming i DIDN'T mourn the loss of these soldiers when it happened?

i am scrolling thru my facebook this morning and run across this:


i've seen it before, but i'm curious. why does it specifically say "and NBC - this one's for you!? so i go to snopes.com. turns out, nbc (like many other news networks) posted a poll asking if people thought "under god" should be removed from the pledge of allegiance. overwhelmingly, people said it should be left in. so, what's the problem? nbc wasn't saying it should be removed. in fact, they were posing the question because, everyday, someone is wanting "god" removed from the pledge of allegiance, or currency, or court rooms. it wasn't meant to be a statement against god, just to get a true reflection of how americans feel. 
i see stuff like this daily on facebook. "you hate jesus if you don't repost this". "you want to kill puppies if you don't repost this". "you want to see this baby die if you don't repost this picture". okay people!! let's get this straight: i don't hate jesus...but i'm not reposting this. i don't want to kill puppies...but i'm not reposting this. i don't want to see this baby die...but i'm not reposting this. 

here are some things you should be aware of when reposting:

#1~the pictures of the sick children: i did a little bit of research and found out that some of these kids aren't actually sick or have already passed (a pic of an adopted vietnamese child with a cancerous tumor on his face is in fact cancer free. he never had cancer, that was a hematoma that has since been removed. and another pic shows a little girl that has been dead for 4 years. her parents are devastated that the pic is in circulation and being used to convince posters that facebook will donate a $1 to cancer research if you repost). ps...facebook doesn't donate money to cancer research based on how many "likes" or "shares" a pic gets. 
#2~jesus won't be upset with you if you don't repost. i have no way of researching this one, but i am CERTAIN that god and jesus have a lot more to worry about than whether or not i am copying and pasting status updates declaring my belief. i am NOT saying you shouldn't repost these, should you feel compelled...i'm just saying: don't judge your friends for their refusal to follow suit. 
#3~don't believe everything you read on facebook. if you read, for example, that "cardinal blew up kim's shiz with her mind", it might be false. never~mind that i, in fact, CAN blow up people's shiz with my mind...just because someone said it on facebook doesn't make it true. i suggest checking your facts before reposting. 
#4~you won't be saving a puppy's (or kitten's) life by reposting that pic (with the exception of pics from animal shelters asking you to adopt, someone might see that pic and adopt the sweet angel. just be sure to check the date of the original post). and, should you choose to repost and your friends refuse? don't worry. your friends don't want to kill puppies or kittens, either. they just don't want to fill up your newsfeed with pics you've already posted. 

how do i research it if, in fact, not everything on the internet is true, you ask? use good judgement when researching. if it sounds fake, it probably is. also, if you can find several sources saying it's true, it just might be.
